Curry dishes using allotment produce
« on: July 21, 2007, 18:02:32 »
Went to the allotment this morning for a pick.  Came home with spuds, carrots, french beans and peas.  We are having curry for supper with these side dishes.

Gujerati sem

8oz french beans
2 tablespoons veg oil
1/2 tablespoon mustard seeds
2 cloves garlic, chopped finely
1/2 chilli
1/2 teaspoon salt
1/2 teaspoon sugar
black pepper

Trim the beans, cut into 1 inch lengths and blanch until tender.  Rinse under cold water.
Heat the oil in a large pan and add mustard seeds.  As soon as they start to crack put in garlic, stiring until is just starts to colour. Add chilli, beans, salt and sugar.  Turn down the heat and cook for 7 to 8 minutes.  Add black pepper and serve.

Gajar, matar aur gobi ki bhaji

3oz carrot
3 oz potatoes, boiled and drained
3oz onion
1 spring onion
2 tablespoon veg oil
1 teaspoon whole cumin seeds
1 whole chilli
3 oz peas
pinch of sugar

Peel carrot and cut into dice, do the same with the potato.  Chop the onion coursely, slice the spring onion finely all the way into the green.
Heat the oil in large pan and when hot, put in the cumin seeds.  Let them sizzle for 3-4 seconds then add chilli and onion.  Stir and cook for 5 mins.  Put in carrots and peas, turn down the heat, cover and cook for 5 minutes until tender.  Uncover and turn up the heat, add the spuds, salt and sugar, stur around then finally add the spring onions.  Stir gently to combine and serve.  You can remove the whole chilli before serving if you wish.

All the veg, the chillis, onion, garlic, was either in the plot, in the greenhouse, or in store.  The house smells fab!
