I’m a bit new to this allotment growing, I’m not growing anything that looks like your picture, so my question to you Tim is:

what is it and how big should it be??

It's Red Russian Kale and it looks bit large to eat as salad leaves? Should be fine for cooking though.

Tried it today - a bit strong cooked. Nicer, actually, to nibble raw - peppery. The stems were too tough.

Troble is there is so much else to eat - this should have been picked younger ages ago.

No, I love them HUGE because I love the rich, strong, iron flavour, but I am alone in my desire.  I always tend to de-rib kale once it is passed baby size.  Mine will only just go out this month to provide me with winter leaves, like my lovely chard.
