Red Onion Fritatta

I used the last of my partner's dad's allotment's onions last night to make a scrummy fritatta.

Take 1lb red onions and put them in a pan with a tbsp olive oil. Sweat them gently for 10 mins until they are starting to brown, this will caramelise them and bring out the sweetness.

In the meantime, in a frying pan fry up some rashers of bacon cut into narrow strips, and two peppers roughly chopped, until the peppers are soft and the bacon beginning to crisp up.

Beat five eggs separately and crumble in a block of feta cheese and a bit of coriander if you have it.

Melt some butter in a deep frying pan and mix everything together, pour it into the pan and cook it on a medium heat for about 6 minutes until the bottom is set.

Then finish it off under the grill to set the top.

It's delightful!

Tarte Tatin sounds interesting, I will look it up.

Of course, I forgot to say at the beginning of my recipe that you should peel and thinly slice the onions!!!!
