soft parsnips

hello,
last time i picked some parsnips they went soft by the next day. they tasted fine but before they were cooked they were sorta...spongy...
any advice?

Take the leaves off as quickly as possible as they continue to strip water from the root.  Keep them in the fridge or at least outside in the cold. Other than that, I can't think what else would make them soft like that.....

In a warm atmosphere they lose water and go soft. They still taste the same but I suspect they're losing goodness. Either keep them somewhere unheated or chop them up and freeze them.

Yes I agree with Robert and EJ: caroots, parsnips etc need to be used fast, kept cold or frozen. Once they get into the warm they deteriorate fast. Don't have any of those nice extra chemicals you get at the supermarket..

Mine go soft if I leave them in the kitchen for about a week, some are in the freezer the rest are in the ground.   :) ;) :D ;D :P
