Harrisa Paste?

Does anybody have a recipe for Harrisa paste? I have dried off my Habanero, in the oven as they were trying to go mouldy... the Ring of Fire and Krakatoa are drying fine...
 :)

Made about 5L of the stuff it's great but still have loads of dried Habanero to use!

My guess is it will keep for 6 months if not years as long as its covered with oil.  I use commercially prepared harissa in small jars and sometimes that sits opened for a few months in the fridge without growing anything unpleasant, although it may be pasteurised at some point in the preparation.  I guess it probably also loses some flavour in time.

Lets face it, you're going to cook it well so you probably will suffer more from the effects of the chillies than any bacterial growth.

Yes SS, I think I will freeze some and trust Matt and keep a jar in the fridge, ensuring it is always covered with oil.  It would make a nice change from my chilli jelly! :P
