that's a nice situation to be in, banana tea bread with walnuts, coffee and walnut cake, just eating them, ahhhh :P

It is my traditional xmas breakfast, A whiskey and a walnut,
If and it is a big IF I have any over I feed them to the squirrels (red ones down here).

I like walnuts in winter salads. And in muffins. And tossed into a creamy pasta sauce.
Last week I made walnut and chocolate biscotti :).

Believe me, this is delicious. Won't use up an enormous amount of walnuts, but you can make it several times!!
WHISKY CAKE
Cake
7 oz stoned raisins
4 oz whole walnuts
6 oz plain flour )
1 level teaspoon bicarb ) Flour mixture
½ level teaspoon cinnamon ) (sieved together)
½ level teaspoon nutmeg )
½ level teaspoon allspice )
¾ level teaspoon salt )
4 oz margarine/butter
5 oz caster sugar
1 tablespoon whisky
1 egg
Filling and icing
2 oz butter
6 oz icing sugar
2 tablespoons whisky
Method
Simmer raisins in water for 20 minutes, drain, reserving one third pint of the liquid. Cool.
Cream margarine/butter and caster sugar until light and fluffy. Beat egg and add, fold in flour mixture. Add raisin liquid. Chop walnuts (leaving a few for decoration) and add with raisins and 1 tablespoon whisky. Pour into two prepared 7” tins and bake in centre of pre-heated oven (mark 4, 350oF, 180oC) for about 40 minutes, or until firm to touch, and leaving the sides of the tins. Remove from oven and leave to stand in tins for a few minutes. Turn out and leave to cool on a wire rack.
Cream butter and icing sugar with 2 tablespoons whisky. Sandwich cakes together with some of the butter cream. Spread the rest on top and decorate with remaining walnut halves.
If you haven't yet made the Christmas cake, it would be a nice light alternative.

thanks for a few nice recipes, will try them. I got a big,big bag full of them last week. Like them in the salad, but so many??????? No squirrels here............

our daughter in law is greek, she brought some back from her nan's tree, don't taste anything like supermarket ones :D

Walnuts are good instead of meat, served with spaghetti and a sort of bolognese sauce, but you need to cook the until they're very tender. Also they're good for nibbles, sprinkled with brown sugar and cinnamon and toasted under the grill, then allowed to cool, crunchy and sweet. Also lightly fried in a little oil with spices, and allowed to cool, crunchy and spicy. Also pickled, as Tim says, pick em green in June.
Also, also, also - you can tell I like walnuts ;D
