Horseraddish and weeds

My chicken pal came up to my lotty today to help me work out my new fencing for getting the chooks up there... whilst we were there he went on a identifying field trip!

Loads of Fat Hen - which chickens love apparently so i'm under strict instructions to stop strimming and pulling it out.

Also - what i dimly thought were dock leaves are in fact HorseRaddish... anyone know what i can do with it? Would hate it to go to waste.

Also got nightshade - white flowers and pea like seed pods - anyone know what variety this is???

We went crossing lots of unused plots (or at least i hope they were unused LOL) - found HGUE grapevines, loads of brambles, damsons, plums, a gorgeous red eating apple tree, loads of bramley's and loads of raspberries!

the obvious answer would be horseradish sauce  ;)

horseradish can get to weed like proportions and difficult to eradicate but I bet it has its values re: warding off pests or some other beneficial use

Grate the horseradish roots and make sauce; I bet someone's got a recipe. The one I planted last winter has flourished and bloomed (and been carefully deadheaded since I don't want it seeding everywhere).

Here's one from The Foody website

300ml (½ pint) Double Cream
225g (8oz) Horseradish
225g (8oz) White Breadcrumbs
25g (1oz) Caster Sugar
2 tsp Mustard
1 tbsp Vinegar
Salt

Soak the breadcrumbs in milk for a few minutes to soften.
Grate the peeled horseradish root.
Squeeze the breadcrumbs to remove excess milk and combine well with the horseradish.
Add the sugar, mustard, vinegar and salt to taste.
Lightly whip the cream and fold in to the mixture.
Serve very cold.



Serve with roast beef, beef stews or smoked fish.

I have horseradish growing in a tub, so can make use of this recipe too - thanks  :)

You normally need only a small quantity for each meal, so all we do is gather the roots, clean and peel them.  Then chop them small in a food processor - if you ever try grating them wear a respirator - add vinegar to preserve the bulk stock in a jam jar. 

When you need some, simply take a small amount of the stock, add a bit of cream, mustard or whatever, just for that meal.

and harvest in winter when dormant so they are less potent on the poor old eyes!

blended with beetroot it makes a nice tasty spread , you can transform a cheese sandwich.
