Mustard Sauce

I'm looking for a nice recipe for mustard sauce to serve with boiled ham.

I made some the other day off the top of my head (yeah, I know should have used the stove  ;) ) and while it was alright-ish, it wasn't as good as I remember my Gran making.

So if anyone has a tried and tested recipe please pass it on.

Oh, I ought to should say how I made my concoction so you can tell me what to add, what to leave out etc.


I made a roux, cooked it a bit, added a pinch of cayenne and cooked till nearly nutty. Meanwhile, heated up some cider with a bit of the cooking liquor from the bacon, stirred that into the roux, when the sauce seemed to be getting there bunged in some Colman's mustard (made from powder) and some good wholegrain mustard, some honey cappings to sweeten and S&P to taste and finally creme fraiche to loosen it a bit and add creaminess.

So, if anyone has a tried and trusted recipe, I'd be well chuffed.

Ooh me too, I love mustard sauce, but I am the only one in my family, so it will never be prepared for me. With cold turkey, sauerkraut and liver dumplings , mmmm.

I will watch for these recipes with eagerness.
