pig's trotters !!

Anyone got any recipes using pig's trotters? I have four in the freezer that a smallholding pal gave me, but am a bit stumped as to how to use them ???

I am sure you will be bombarded with recipes.....I know mum has them from time to time....but alas she is out on the raz so can't ask her!  Honestly, she has a better social life than me!! 

What about these:

Ingredients
4 pig's trotters
300g sugar beans, rinsed and soaked overnight
1 large onion, halved and sliced
25ml red or white wine vinegar
1 tsp Sugar
2 cloves
5g ground coriander
5g ground allspice
20g curry powder
10g ground turmeric
1 large bunch of coriander, chopped
salt and fresh ground black pepper
Olive oil, for dressing
1 garlic clove, chopped


Method
1. Soak the trotters in water for an hour, then drain and pat dry.

2. Meanwhile, drain the soaked beans, place in a large saucepan, cover generously with water and bring the beans to the boil. Reduce the heat and simmer for 45 minutes, until tender. Drain, place in a bowl, cover with cold water and set aside to cool.

3. Meanwhile, place the trotters in a large saucepan. Cover generously with water, bring to simmering point and simmer gently for 45 minutes.

4. Strain the trotters, retaining the liquor. Dice the strained trotters.

5. In a large pan place the liquor, diced trotters, onion, vinegar, sugar, cloves, coriander, allspice, curry powder and turmeric.

6. Bring to the boil, reduce heat and simmer for 45 minutes.

7. Mix in the chopped coriander and season with salt and freshly ground pepper.

8. Drain the cooled beans. Mix the beans with olive oil and garlic. Season with salt and freshly ground pepper.

9. Place the beans in a large serving bowl. Top with the pigs' trotters and serve.


or....................

4 brined crubeens (pigs trotters)
2 carrots
1 stick celery
1 onion
175ml/6fl oz wine vinegar
melted butter
dried breadcrumbs
pinch allspice



Method
1. Bandage the trotters in pairs on to splints so that they keep their shape while cooking.
2. Put in a pot with the vegetables and cover with water and the vinegar. Simmer for 6 or 7 hours.
3. Allow to cool in the liquid.
4. To serve, split the trotters in two and roll in melted butter and dried breadcrumbs mixed with a pinch of allspice. Heat slowly under a grill, or in the oven at 180C/350F/Gas 4, until hot and crisp on the outside.

Think I'll go for both of those!!!!!! They sound delish....but what are sugar beans? (sorry if I appear a bit thick:( )

Hmm, googled it and it appears to be an african bean.  I reakon any old bean would do!  ;D

A lad in my class got a Saturday job behind the Co-Op butchery counter and used to put pig's trotters up his sleeves (one in each hand) then pull his cuffs down and then serve people as if nothing was happening.  If someone asked for a pound of sausage he'd point with a trotter and say sommat like "this one madam?"  We'd be creased but he'd never turn a hair  ;D  Happy days

He works in a dead swishy hotel now so it didn't do him any harm  ;D

I think they're beans which hail from Africa and are sold usually in tins I think but it looks like EJ was using dried ones.  You might be able to get them from the deli, Asian grocers etc.  Or if not substitute them for another bean

I don't think I have ever eaten them, but know they are a french delicacy ... any descriptions? I am keen to try most things ...
