Lazy Potato Curry

500g potato, peeled and cut into 2cm cubes
440g tin of tomatoes, chopped, or of course fresh toms skinned and finely chopped
100g onion finely chopped (optional)
1 tbsp cooking oil
1 tsp black mustard seeds (or white if you can't find black)
1 tsp cumin seeds
1 tsp ground cumin
2 tsp ground paprika
2 tsp ground coriander
1/4 - 1/2 tsp chilli powder (depends how hot is your chilli and how hot you like it)
1 tsp turmeric
salt & pepper to taste

Sorry it's a mix of imperial and metric!

Heat the oil in a large saucepan.

Fry the mustard seeds + cumin seeds in the hot oil for ~30 seconds or until they start to pop.

If you want to use onion, add it now and fry for 1-2 minutes.

Gently add the chopped tomatoes into the hot oil, stir for 1 minute.

Add all the powder spices and season to taste (salt + pepper) and stir for another minute.

Add the potato pieces, cover and simmer for 20-25 minutes or until the potato is cooked. Keep an eye on it while it cooks and add water if it gets too dry.

Very tasty, and very easy once you have the right ingredients in your spice cupboard. Usually I do it with tinned tomatoes and without onion so the only 'fresh' ingredient you need is potato.
