Windfall Apples

New to the site and nearly new to wine-making!!!!!

So far made rhubard, mixed fruit and parsley wine

I ve got heaps of windfall apples, mixture of varieties and would appreciate a recipe for wine or cider.

Can anybody help?

I have a recipe that is bubbling away downstairs now, if I remember correctly it uses up 24LBs windfalls! :o   
Will try and remember to dig it out for you later, in teh midst of baking and cleaning at the mo!!  DP

sorry about delay - been away on hols.

I have done both cider and perry the same way - juiced them (I did that by freezing them in our spare freezer in the garage then pounding them in small quantities in a bucket using a length of 3x4 before putting them through a cider press).  Added a teaspoon of wine yeast dissolved with a teaspoon of sugar in 300ml tepid water shared across the whole lot.
The apple juice filled 3 demi-johns (with air-locks), which were stirred/shaken/swirled (whatever) daily for 4 days.
Back from hols now and cider has stopped bubbling, so I'll get it racked off and see how well it settles.

You might get away without adding yeast, as there is natural yeast on the skins, but wine yeast will probably ferment the sugars through better.  My 3 demijohns came out of 5 tesco bags of apples.

Apple Wine

24lb windfalls
3lb Sugar (to the gallon of liquor)
Yeast and nutrient
1 Gallon Water

Chop apples into small pieces (I used my food processor) Put in bin and add the yeast, nutrient and water. (the water will not cover the apples)
Cover and leave for a week, stirring vigorously several times a day.
Then strain the juice from the pulp, press juice from apples.
To the liquid add 3 lbs of sugar per gallon.
Put into a fermenting vessel, fit air lock, racking when cleared.
The wine will be ready for drinking within 6 months, but improves for being kept a year.
(this made 2 gallons for me!)

Weedin project and DP

Thank you for recipes - had busy weekend and consequently have both wine and cider on the go - OH came in from work said the house smelt like a brewery - I had also been straining beetroot wine and bottling rhubard wine!!!!!!

I ve now got visions of a mad scientist resembling me surrounded by lots of bubbling/brewing concoctions and a trail of apples through the house!

Oh dear! Not quite sure how I must be coming across on this thread but i,m not obsessed with alcoholic beverages honestly i,m not!!!!!!!!!!!!!

Haven't done as much this year, but usually our house has demi johns bubbling away all over the place, and yes my downstairs can have a certain brewery smell about it! ;D   Great isn't it!!!

I always feel like a witch making up her potions!
