If it is growing upwards, then I would say it has bolted and is starting to flower.  Spinach kinda forms a rosette...kinda.....of leaves at the base, not upwardly.  Lack of water or root disturbance could be to blame.  Not to late to sow some more. :-\

It may well have bolted but there again I have just dug up Perpetual spinach that starting bolting in early March and I have had two crops a week in the meantime, so hopefully you may well be able to harvest this lot until the next lot are ready?

Put the spinach  between two rows of tall growing veggies, a little bit of shade prevent running to seed. A lot of manure/ compost in the soil makes the spinach not bitter. And water every day. Pick the leaves as soon as possible but do not pick the inner leaves. let them grow on and on and on.......Water is the key ...
