Title: I just love a bit of cake!! Howbout you?
Post by: return of the mac on May 16, 2005, 18:38:56
So whats the favourite- subject very close to my own heart as i love cake.
Yum, John

Made a great cake at the weekend- very simple too, and dairy free- heres the recipe:
6 tablespoons (big) of sugar, SR flour and marge (markies dairy free is the best)
3 eggs
mixit up and if your brave do the holding it above your head trick.
into greased or foil lined circular cases (9" i think) and into the oven at 180 (preheated)
make the filling with the marge, icing sugar, milk (soy, goats, cows- no matter) or water (just a little and a drop of vanilla essence.
I filled mine with rhubarb and strawb jam (i strained it) as well as the dairy free icing, but only after the cake had cooled for hour or so (very hard restraining myself)
dust with icing sugar and eat (do i have to tell you)

Please could you add "all the above" to your voting as that is what I would have to say!  I can't choose!!  I love most cakes, the only one I can think I wouldn't vote for is a coconut one.

I love all cake except ginger (devil's food) and gatueax with all that poncy fake cream.  I dont think you can beat sponge straight out of the oven.  Doesn't matter what variety.  Banana loaf, marble cake, viccy sponge, coconut, lemon, almond    ..... etc, etc.  I want cake now :-\

How about a none of the above option?

I adore cake. But Mr Aqui doesn't eat sugar at all and I've cut it down a lot (once a week now!) so I can't make a whole cake for me to eat in one day!

I make a lovely sugar-free apple cake. Absolutely delicious! Tried a sugar-free carrot cake, but it turned out like a pancake!

I just had to vote 'other' because I can't decide between my faves :D

I love a nice simple sponge, but my Dad also makes the best fruit cake in the world. He does the family Xmas cake every year, and always does a small one to send up to me. I get to eat the whole lot as well, because hubby doesn't eat dried fruit :P

I also adore coffee and walnut cake and lemon drizzle cake.

Might have been easier to say which ones I didn't like ;D

I've found one !!!! My mate Lyn doesn't eat cake at all.  She doesn't eat biscuits but horror of horrors she hates chocolate   :o  I think she's an alien - thats certainly not human behaviour.

my fav is the traditional german 'blechkuchen' - cake you bake on the tray - often with crumbles on top. works with almost all fruit - yum!

oh, there are hundreds of variations. you can pretty much make it up as you go along. for the base, use a yeasty dough (like pizza dough but sweet). roll out and lay onto a tray. then proceed to top the cake with any fruit you might have to hand: sliced apples, plum halves, cherries, sliced pears etc etc. soft fruit wont work this way - the baking time is too long and the fruit would go mushy.
top with a sprinkling of sugar (so the baking fruit forms its own 'syrup' and top with butter crumbles (butter, sugar, flour) :)

to make the cake particularly moist, you could baste the base with something like a thin custard or something, then lay the fruit and top off.

i bet you will eat the first slice before the cake is cold! :D

I am only just finding my way round this site & came across this. I want some cake now.
I find that many of the cakes I make are a result of gluts from the lottie. We have just had rhubarb cake ( which my rhubarb hating daughter loves ), we then have lots of different courgette cakes & pumpkin cakes later in the year. A big hit is banana & chocolate chip cake - I'm always looking for different ways to use up black bananas. Happy eating!

Ohhh, I've just remembered that we used to make 'fridge cake' when we spent weekends with my Nan as kids.

Melted choclate, crushed biscuits, glace cherries and dried fruit all mixed together and put in the fridge to set.............I haven't made it for years, but I think I might have to again, now ;D

I luuuurve cornflake cakes.  Golden syrup, butter and cocoa poured over cornfkakes and left to set.  I would do these with the cubs but the syrup gets as hot as lava and i dont think they could resist licking the spoon :P  Could do fridge cakes though.

Ohhh, didn't think of adding marshmallows. Thanks for the idea, Diana ;D

I remember making cornflake and Rice Krispie cakes too, but we did them with melted chocolate, which never got as hot as syrup ;D
