Much maligned - chicken wings?

We all love them - & cheap.  Took too many out of the freezer to feed 12 yesterday, so made real stock with a couple of pounds remaining.

That left the wings which looked so good, couldn't bin them. Even though all flavour has been extracted in 2hrs simmering.

But, simmering with lovely veggie things, they were now nicely tasty.
So - skinned  & de-boned (they just fall apart) & into a green 'Thai' curry with Alphonso (NEW IN) mangoes, banana, Welsh Onions, fresh tomatoes & coconut milk, they were just great! Add a little water or chicken stock(!) as needed.

Just have to remind you of the stock that wings can make??

Tim, your curry sounds interesting, could we have a recipe. I love mangoes.

Recipe? Me? Funny?

The main ingredients are as listed - as to method, chacun à son goût!

Curry powder or paste I prefer to grind fresh but, for Thai, I tend to use www.thespiceshop.co.uk - more authentic than mine. I don't always have fish paste or lemongrass or fresh coriander. But I do always prefer galangal (fresh - from freezer) to ginger. Delia has red & green options.

Thank you, the recipes look delicious on that site, I have added it to my favourites to have a good look at later.  We are curry fanatics in this house, could eat it every day!  I am going to look out for the Alphonsos too when I go shoppping this week.

Tim   lovely look bit of stock there.  I am a bit of a stock afficianado and love to make a good chicken stock. Very satisfying  :)  I used mine last night to make a chicken, sweetcorn and noodle soup with egg drop, tad of soy and hot chilli sauce

Very good it was too!

We grew lemongrass on our in bloom plot last year but it was tough.  You live and learn

I have a lemongrass in a 12" pot from last year, i've now got it in gh, looking a bit sorry for itself, some brown leaves, any suggestions on how to keep it and how to harvest and prepare it?
