Title: kidneys

Have discovered that the children love kidneys - the sort that my Mum puts in Steak and kidney casserole  - lambs???
Does anyone have recipes for kidneys without steak involved - as that is expensive and chewy too?

Kidley pasty is one of my faves!  To be honest, all it is, is a meat pie made purely from kidleys!  I love the kidleys more than the steak in a steak and kidley pie or pud, so my grandma, closely followed by my mummy, started making them.  YUM!

Anyhow, googled and found this site with a whole list of kidney recipes.  Hope there are some there that tickle the kids taste buds!

I make liver and bacon casserole by
frying the bacon (streaky) then browning the onions in the bacon fat.  Flour and seal the liver, add load of mushrooms - pref flat ones - add stock,oyster sauce,soy sauce and thicken with corn flour.  I have converted my OH who before thought that liver was dog food.  S'pose you could do the same with squidleys.
(liver best served with mash and peas, in a bowl so you can fit gallons of the sauce. Yummy, see told you I was common)

Kidneys are eaten a lot in Spain.
We eat lambs kidneys chopped up cooked in olive oil and spanish smoked paprika (not the hot paprika) with new potatoes and red onions cooked alongside. A drop of spanish sherry added to it makes a fab meal. Yum.

Worth trying liver too.  My daughter loves it and it is really good for them.  I just fry in butter (after removing nasties) and then use it like a casserole meat.
