Title: Overwintered onions

I have a row of overwintered onions (from sets). I have noticed that some of them have the beginnings of a little bud appearing - so are going to bolt soon.
When do I harvest them? What happens if I let them flower - does the onion stop growing/become unusable?

Pinch them out & wait till the foliage starts collapsing & yellowing.
Then break the roots & let them dry off on the ground in the "summer sunshine". If there isn't any, lay them on wire netting or similar, to allow ventilation - in shelter if possible.
