I planted horseradish this year (bought root plant), dog jumped on it so i bought another plant (leafy plant) they are both growing well now, even though they look slightly different, I need to know how to make horseradish sauce, how do you prepare the root etc?
funny u ask this question me and my mum was asking the same question the other day.When my dad had his lottie he used to make horseradish sauce believe me the best u have ever tasted, it was so hot it would blow our brains out as kids but we loved it.sadly dad died 5 years ago and he allways made the sauce and mum does not no the recipe so i would love to no how to make it to , perhaps i could blow my kids brains out with it :)

the link has got lots of horseradish recipes, but it uses jars of horseradish, i could really do with knowing how to prepare the root
this months Grow Your Own magazine has following recipe:
1.5 - 3 Tablespoons grated horseradish root (scrubbed and peeled)
1 tsp wine vinegar
1tsp lemon juice
0.25 tsp mustard
0.25 tsp salt
freshly ground black pepper
1tsp sugar
250ml whipping cream (whipped into soft peaks)
Place the horseradish in bowl with vinegar, lemon juice, mustard, salt, pepper and sugar then fold in the cream (do not over mix as it will curdle).
It says that it will keep for 2 - 3 days in the fridge.
thanks justy, wonder if it will work with vegan cream, my bf is lactose intolherant. and i dont want hime to miss out on horseradish sauce any longer!!!!!
The 'micro-plane' graters are the best .
Could you use low fat mayo? Sauce made with mayo will keep much longer.
And, of course, there's no need for mustard. Just taste the horseradish!
And hotter? Just more radish, less mayo/cream!
Funny that, I received 2 microplane graters from my sister in law overseas this morning! I was bemoaning the fact, when she recently stayed with us, they are so expensive over here, and the one I use constantly is too fine for grated cheese, et voila, now I have 3 of varying sizes, one of those kitchen gadgets I wouldn't want to live without ! ;D

DP - I agree about some being too fine for cheese - you pick up the shreddings & they just go into a mush?
Anyone got a photo of horseradish - all looks like dock to me + I'm never sure. Don't want to plant some then think it's just a weed. Is there some defining feature?

Tim does h/radish give off any fumes when being grated. I'm thinking of the fumes that chillies give off and you end up coughing and spluttering like you've been gassed.

Well, hope you are good at digging! Dig out the root. Peel it (as fast as you can!) Best way of avoiding worst effects are to put it in blender or food processor. But, big word of warning, keep your head well away when you take off the lid!
Then it sounds a great idea to look at the recipe site. I just used to mix it with really good mayo and keep it in the fridge.
Mind you, you have to like really strong tasting horseradish if you make it yourself from the real thing!

Grow it in a bucket with the bottom cut out? I think thats what my dad used to do. I've planted some this year and it doesn't seem to be doing anything yet :(. Will have to wait and see if it appears
Fumes - can be lethal. But, as with chillies, onions etc, just take care. Use a fan if you have one. MB's point - one of our grown children didn't stand back & ended up on the floor. He was the one, when younger, who took a chilli from the table &........!
And yet I grated the one above without effect until the very end.
I find that a processor leaves the 'hairs' in - but maybe that's just me?
Hot? As said above - just mix it to your taste. I like it so that I can eat it off a spoon.
