But - you think that you know?

Thats got me confused!!

Whatever it is (ham or gammon), I always cook it  " a la Delia" :-

Soaked first.

Placed in foil 'tent' which allows air to circulate and steam to build up to retain moisture.

Approx. 30 mins from end of cooking time, remove from oven.

Carefully remove brown outer skin, leaving as much of the fat behind as possible.

With sharp knife make diagonal cuts to form diamond pattern.

Stud each 'diamond' with a whole clove.

Smear with english mustard ( colemans).

Cover mustard with demarara sugar.

Return to oven to finish.

It has to be tasted to be believed, and yields a lovely ham stock for soups etc.

...Has anyone ever tried Nigella's ham in cherry coke recipe??

companies with names like 'happy meats' always make me laugh.  Packaging it up that so long as you look after the animal well then it'll be happy to be slaughtered!

Don't get me wrong I'm not against ethical farming, I just find the way its packaged highly amusing!  Like cruelty free meat.  Like killing something isn't at all cruel.
