Made the most delicious casserole last night - even though I do say so myself ;D
1/2 leg of lamb - bone in
1 can butter beans
1 can chopped tomatoes
4 garlic cloves - peeled and left whole
2 leeks - sliced into thick rings
Any other veg you like - I used onion, sweet potato and red pepper (sounds strange combination but was lovely
250ml red wine
250ml stock - I used veg stock
1. Turn oven to 180
2. Season and seal lamb on all sides in casserole dish and put to one side
3. Put everything else in pan
4. Put lamb back on top, put lid on and pop in oven for about 2 hours, basting lamb and turning it once.
5. Serve with lovely rich mashed potato made with loads of butter and a lovely glass of 3 of red wine.
Or even slower & longer (with the AGA) - especially with shanks.
Love slow roasted lamb shanks, this thread is making my tum grumble!

I like lamb, but not so keen on lamb casseroles...to slimey for me. :-\

however-i have just made the lovliest lamb stew-roast tates mushrooms,carrots and peas in the gravy and a yorkshire-yuuum!
homemade carrot cake fer pud-from the cranks recipe book-cant beat it-later this year it'll be our own veg too!

I think this would work with neck of lamb if you wanted a cheaper meal.
I am going to raid crisp bin now.
