A La Jamie! Slice it up, grab a handful of mint and 2 tablespoons caster sugar, mash them together in a pestle n mortar, and sprinkle over pineapple! My kids love it!

pineapple limeade
1 med pineapple
2 limes
1/4 cup sugar
3 cups sparkling water (i like to use soda water)
icecubes
extract the juice from pineapple/ limes & add sugar~ place in the fridge until chilled.just before serving add water & pour over ice.garnish with lime wedge.

spiced pineapple chutney
makes about 675g/ 1.5lb
pineapples, total weight about 1.2kg/2lb 10oz
115ml/4 fl oz white wine vinegar
1 teaspoon ground cinnemon
1 teaspoon cardamom seeds
2 teaspoons curry powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
175g/6oz sugar
toast cardamom seeds in a heavy-based frying pan for 1/2 to 1 minute, stirring to prevent them from burning, until fragrant. remove the seeds and crush them with a pestle. set aside
peel the pineapples, taing care to remove all the eyes. slice, cut out the core, then chop the flesh quite finely, collecing any juices that come out during the preparation.
put any juices, the vinegar and spices in a saucepan, bring to the boil, then simmer for 5 mins. add the pineapple pieces and simmer for about 20mins until tender.
over a low heat, stir in the sugar until dissolved, then raise the heat and boil, stirring occasionally, until the chutney is thick and there is no free liquid.
ladle the chutney into warm, dry, clean jars, and seal. store in a cool, dark place for 1 moth before eating.

this is an absolute favourite of mine, and of those people lucky enough to have received some chutney as a present from me. i have frequent requests for this one!

GOod job it is a whopper! The chutney sounds great, but also seems such a shame to use it in that way....and I have never thought of putting pineapple in a curry. Pina colada, oh yes please! :P No jam recipes tho?

From an old Marguerite Patten book
1 lb cooking apples (after peeling and coring)
1 lb pineapple (weight after peeling)
1/8 pint water
2 lbs sugar
- Dice fruit.
- Simmer fruit with water until soft.
- Stir in sugar until dissolved.
- Boild rapidly until set.
Haven't a clue whether it works, though!

PS There's also a recipe for Japonica Jam
1 lb Japonica (unpeeled)
1-1.25 pts water
pinch ground ginger
2 lemons
sugar
- Do not peel or core the japonica.
- Cut inot halves and simmer in water until pulp.
- Add ground ginger.
- Sieve and to each pint/lb of pulp add lemon juice and 1lb sugar.
- Stir sugar until dissolved.
- Boil until set.
All very simple - but what's a japonica? ???
Well according to google it could be an investment company...don't think that jam would taste all that good on your toast, fish! , Pieris, Honeysuckle or animal poison! I will leave that one for you to make Gavin! ;D Thanks for the recipe, I am going to give it a whirl tomorrow.
just to say: there seems to be a pineapple glut right now - well, at the market, anyways. 2 for £1 and such! am in the middle of making the chutney i described above :)
as a shortcut, i usually end up using cinnemon and cardamom seeds as described, but replace all the other spices with mixed spice (as i have that in the house). smells delish, and hubby is already looking forward to eating it come october or so :)
Soak slices in whatever alchohol you think is appropriate, sprinkle with sugar (I use demerara) & slap on the barbecue. I've also been told pineapple salsa is delicious but haven't got a recipe to back that up.
