I have a cauliflower, and it's slowly turning brown. Is it still edible?

If it's just going brown all over through natural ageing/ exposure to sunlight you can just remove the surface discolouration before cooking and eat it. If it's got dark brown patches due to boron deficiency, it's likely to taste very bitter and not make good eating.

I guess it's discolouration due to ageing, there are no patches. So we will go ahead and eat it!

Too much sun, I would say, did you leave the curd exposed to the sun?
Bending leaves over the curd as it forms helps to prevent this!

Some of my caulis have been infected with small maggoty things, even though the tops look perfect, they come from the bottom of the stems. Still edible but just the tops of the florettes.

I didn't know about covering them with leaves. It was probably due to too much sun exposure. I will try covering them next year.
