COD EN PAPILLOTE WITH FRESH GARDEN VEGETABLES AND STRAWBERRY, HARISSA SAUCE AND LEMONGRASS CRÈME FRAICHE SAUCE
As I still had a couple of Cod Fillets left over from catching one a while back it was time to enjoy
It cooked one of our favourite ways,,,,,EN PAPILLOTE (IN A BAG)
We had some Garden Yellow and Green Courgettes,Garden Peas,Snow Peas,Cobra Whole Beans and Beetroot Leaves,along with some small toms,Asparagus and Black Olives.
All the above wrapped in a 18 x 18 inch Parchment paper envelope,seasoned,and a splash of white wine (or chicken stock) and a splash of Olive Oil......seal envelope well with no gaps in the paper and twist each end tight.
Place on tray and put in middle of oven
200 c / 400f for 18 minutes/ to 20 mins
I served this with Oven Roasted Sweet Potato wedges ,and drizzled the cooking juices from the envelope over the plate.
Plus a spoon full of each of the 2 sauces
