I have cucumbers growing which are suitable for pickling, so far have three which are the right size, hoping more to follow before they get too big !!
Have tried to find a suitable recipe to pickle them whole, like wallies but can't find anything. Can anyone help ?
This probably won't help you but this is what I did today. We had 3 medium cucs on the vine and had finished eating a jar of Vlassik Garlic Dill Pickles so I sliced up the cucs and cooked them 10 minutes in the leftover jar of Vlassik juice. Made delicious pickles with no effort or cost!

For me Wallies are the small gherkins/cucmbers that you buy with your fish and chips. Have to be crunchy !!
Bought the cucumber seeds specifically to grow for pickling but so far don't know how I should do it!

Well, that's one jar of pickled cucumbers made ! The three that were ready I have quartered and used the recipe ancellfarmer found.I have lots of diddy ones which I hope will all grow at the same time so that I can pick and pickle them whole for my Wallies !! Jar ready and waiting.
Have also pickled my beetroot using a slash of balsamic. No one told me the mess I would make peeling them !! Hope all comes together for the taste test in 2 weeks time !!
Will be interested to receive your opinion of these when matured. I think that we will have to proceed at a jar or two at a time because catching enough ready at any one occassion to do a bulk lot would involve a fair number of plants. I am growing "Vert petit de Paris" from Lidl - 29p per packet-"Contains 60 plants" it says. I got 74 seeds!, have sown 20 and have 18 plants which are now flowering and beginning to run amok. However, I see no problem in preparing, say, 5 litres of pickling brine in advance and reboiling it in smaller quantities as jars are filled. Reckon a demijohn with stopper will keep it sweet.
Mine are from Lidl as well !! Just checked the name and they are called Restina. When I made up the vinegar for the first batch I just reduced each ingredient to quarter amounts and there was enough to fill the one jar.
I do have a jar full left over from the beetroot which I have kept ready to add to the next batch.
Will post again after the first tasting !!
hi Fitsie, last year we made our glut of cucubits( gherkins and cucumbers) and apples into jars of chutney using cider vinegar, sugar and spices , some with chilli. These have kept ourselves and our friends and family in chutney all year. great with cheese, burgers or sausage or cold meats. There are loads of recipes you can adapt to your own taste. good luck!
