Last night I found my recipe for home made liver patè that my wife kept from 20 years ago... Woo hoo - its good. Just made 3 tubs of it.. (I double up the amounts..)
Gavin's Chicken Liver Patè
1/2 kg Chicken livers – cut into strips to cook quicker
2 chopped onions - medium
1/2 cup chopped rindless bacon
4 cloves chopped garlic
1 chunk margarine
Sprinkle of thyme
Sprinkle of sweet basil
Sprinkle of salt and pepper
5 big swigs Sherry for you and 2 more for the recipe!!
Slowly fry onions, liver, bacon, garlic and spices in some margarine. Cover and simmer a bit then finish with lid off. (remember to take a few swigs of sherry whilst you stir..)
When cooked add some sherry and remove from stove.
Cool for a few minutes while you refill your sherry glass - again.
Place all in a blender and blitz till nice and smooth.
Spoon into shallow dishes and pour over a layer of melted margarine to seal.
Place in fridge to cool.
I like your style Gavin!
I have never actually made this! My hubby likes it though, I should give it a try. Next time I see chicken liver...
Your recipe seems really easy! I read another one where you had to do something complicated with currants then push things through a sieve : bugger that.
Gavin,
Dry, Fino sherry or something sweeter?

Sounds tasty fella, will be having a go at that ,,,,,your recipe plus homemade bread from our new
Bread maker ...yes I did relent and buy one ....plus some local Dorset butter sourced from our
Butcher makes for a tasty sounding snack.....all I've gotta do is unpack around 100 boxes
And I'll feel more at home, still waiting to install kitchen appliances so no cooking for
Me just yet,but it's amazing how you can get by with a steamer, wok, microwave and slow cooker.
Anyway,good to be back online
