Again,another recipe that uses a common fish(Lesser Spotted Dogfish) .....known as a Puppy..... that I catch many of that has a "distinct" flavour that folks have been deep frying in batter for 100,s of years yet very seldom do you see it on the fish counter as its not counted in the sustainable table of fish to eat.that said,the recipe is all about the sauce really,its a tasty Masala curry sauce that lends itself to all manner of white fish,I think Jude prefers plain cod fillet with the sauce and plain boiled rice and says the combination suits her.
Again if you find a fish that you enjoy with the sauce please let me know as I do enjoy trying curry with something different.
Or indeed YOUR additives to the sauce that IYO make it more tasty...... :wave:

The Puppies lend themselves to Curry sauces really well and this spicy Masala Sauce hits the spot served with plain Boiled rice.

Right lets assemble the Ingredients.............
2lb Cleaned Dogfish/Huss Fillets on bone cut into 1 inch thick steaks,(White fish alternative)
1 Star Anise
2 inch piece Cinnamon stick
8 Black Peppercorns
1 Tsp Coriander Seeds
1/2 Tsp Ground Cayenne Pepper
1/2 Tsp Ground Turmeric
1 Small Onion Chopped Fine
4 Garlic Cloves Chopped
2 Inch Piece of Fresh Ginger Chopped
2 Medium Hot Red Chillies (or chillies of your choice & heat)
2 Tsps Light Soft Brown Sugar
2 Tbsps White Wine Vinegar
2 Tbsps Sunflower Oil
4 Tbsps Coconut Cream
Fresh Coriander
Fresh Limes
salt & pepper
water

Take (TOP 4 ) Spices from above list and dry fry in a pan for a few mins till spices are slightly coloured and giving off a spicy scent.
Let fried spices cool and crush to a fine powder in a blender and leave aside.
Add following ingredients to blender..........Chopped Onion,Chopped Garlic,Chopped Ginger,Red Chillies,Sugar,Vinegar,handful fresh chopped coriander,1 Tbsp Sunflower Oil,1/2 Tsp salt.......now blend above ingredients and powdered spices to a semi rough pulp paste...or smooth as you wish !!!!!!!!!!!

Heat remaining Sunflower oil in a pan and add Curry Paste,now heat for a few mins until paste seperates from oil,stir contents of pan together....

now add Coconut Cream and 3 fl oz of water.........combine contents of pan.
Reduce heat to a simmer and cook through for 10 mins reducing sauce by half making a nice thick consistency.
This allows us time to grill the Puppy steaks.(or white fish alternative)

Place Puppy Steaks on grill and season well both sides and cover with cooking oil or melted butter....as you wish.
Cook Fish for 2 to 3 mins either side or until just cooked through.

Pore Masala Curry Sauce onto plate and Top with your Puppy Steaks,serve with plain boiled rice and a squeeze of Fresh Lime.
The Masala Curry Sauce keeps for up to a week if fridged.
