Every now and again those journeys down to Chesil Beach in Dorset bring stunning sun rises while your waiting to start a fishing session.
Its on those magical occasions that you can be standing on the shingle and the next thing the sea erupts with Whitebait launching themselves onto the stones trying to avoid the mackerel,and of course you rush forward and get some of each as FREE fish are everywhere !!!!!!!!!!!!

As to buying and using them for this recipe is rare but if your lucky enough to experience the above and you get a few dozen freebies they are tasty little morsels.

INGREDIENTS
1 pint full fat milk
Quantity of Fresh Whitebait
Oil for frying
30g Plain flour
sea salt
1 tsp Cayenne Pepper
1 tsp Smoked Paprika
CHILLI DIPPING SAUCE
150ml Tamarind Sauce
1 Tbsp Hot Chilli Sauce
50ml Sweet Chilli Sauce
Toast bread slices
Flat leaf Parsley

Pour the milk over the whitebait set aside for 10 minutes. Drain and discard the milk...this removes the fishy smell that some don't like.

Place the flour, cayenne,paprika and salt in a plastic bag. Shake the bag, ensuring it is sealed tightly. Add the fish and shake again until well combined. Remove the whitebait from the bag and place onto a plate, or baking tray.

Fill a deep-fat fryer or a large, deep, heavy-bottomed pan two-thirds full with vegetable oil. Heat the oil to 190C/375F
HOT OIL IS VERY DANGEROUS,DO NOT LEAVE UNATTENDED
Fry the whitebait in batches for 2-3 minutes until lightly golden in colour. Drain onto kitchen paper and mix with a pinch of salt and paprika, until well combined.
For the dipping sauce, stir the tamarind, sweet chilli sauce and Hot chilli sauce until well combined.
Tartar sauce is also tasty on them.

Assemble everything on a plate............

Grab a piece of hot buttered toast and load it with some of the chilli whitebait morsels.

Now drizzle some of the Chilli Dipping sauce over them and a tsp of tartar sauce along with a sprinkling of chopped parsley and a squeeze of Lemon and munch on in..!!!!!!!!!!!!!!!!!
of course for the squeamish out there removal of heads can be done if you don't want a Beady eye staring at you as it disappears down your Gob..... :tongue3:

This is a place called Cogden its a beautiful spot to fish,walk your dogs or if you walk towards West Bay you get to see the Jurassic cliffs in all their splendour and finding fossils is great fun.

looking back the other way is Portland Bill in the distance,on the right tide you can walk near 17 miles along the shingle.......its a stunning place.

That's a great plaice.
When we were kids lived up on the furness peninsula in Cumbria and used to go floundering in the shallow waters of the estuary. Whole fried flounder yummy.
No mentioned health and safety in those days and am still here!!
You mentioned Furness,cant help but think of my trip to Barrow in 79....A GF and I met a couple from Barrow while on holiday and they said"hey guys" come and visit..........
so the following year were on the train from Euston Via Preston and @ 8pm were standing waiting for the local chuffer to deliver us to Barrow.
A short cab ride later Pete says,hey how about a pint Gazza,"yer" says I,lets go to the working mens club says he......
So theres me, a 19 year Old London Lad guiding his 20 year old GF into this working mens club......ooooop North.
I guess you know whats next being a local.....the girls are lead through to the girlies bar and me and Pete head straight in
to the fellers part......34 years later I sit here and can still see my GF,s face through the dividing section glass.....I think "Thunder and and...."you wait till later " were etched on her face.....it was so funny that were invited up to see them and spend it apart in this club.....theres me trying to be polite and think nuffin of it and my then GF ....fuming waiting for me to come and save her......well,as we both smoked then and our northern friends didn't we went outside where I had it both barrels....to this day I cant recall what I said to get them out of the club but to say it was alien aint an understatement.
