Title: Need recipes for limes which were a bargain buy!!

Bought a box of 40 limes for the princely sum of £1.80 at a fruit & veg supplier ( couldn't walk past them at that price!!)

Has anyone got recipes? Want to make good use of them

Lime curd  is yummy. Use it as you would lemon curd. I have the recipe if you would like it.

Any left over, after you have tried all these recipes, you can freeze.  I grate the peel off one while frozen, on a fine grater,  then defrost  to use as normal.
You could also freeze in thin slices to add to drinks.

LIME CURD RECIPE

6 - 8  limes
8 ozs castor sugar
2 ozs butter
2 eggs

Grate the peel off the limes
Put grated peel in a double boiler ( or bowl over a saucepan of hot water) with sugar, sqeezed lime juice and butter. Leave until the butter and sugar have melted. Lift the bowl off the pan and set aside to cool slightly.

Lightly beat eggs in a large bowl, gradually mix in the butter mixture then strain the curd into a clean bowl and place over the saucepan of hot water. Gently stir continuously until the mixture is slightly thickened. When its ready the curd will just coat the back of a wooden spoon.  Don't let the mixture boil, needs to be about 85 degrees C. 
Pour into sterilized jars, cover with wax disc and lid and keep in fridge for up to 8 weeks.

Just for interest, I always make my curd, lemon or lime, in the microwave!  Seems so much easier.
