Title: Is my beetroot beyond repair?

I pulled my beetroot two weeks ago. I gave all the big stuff away and kept the baby ones. I left them in the greenhouse for the mud to dry. I forgot about them and they have gone a bit spongy. Can I still  use them?

If you wash the mud off..put them into carrier bag and keep them in cool (outside) until next day..there is good chance that they will take some the moisture that is left on skins and 'bulk' back some for some amount. There is still good chance that they make useable roots again.

They should be fine for soups or casseroles or Madhur Jaffries recipe for beetroot with onions or even chocolate beetroot cake or bownies.

I find that once you cook them it doesn't matter if they have gone a little floppy.
