Hi, my Oh brought half a sack off monster beetroot from our Lotty,I got out two jam pans and boiled them for 1hr I thought I'd pickle them :toothy10:I was hoping that they woulden't be tough! they were lovely but the tops and ends were rough and not nice to pickle ,so I smashed them up with the potato masher until pulpy and boiled some apples about 1lb and rasins and a large onion finniley diced and a teasp of ginger add some vinger half a cup, when this was very soft I then bashed that! with my trusty masher! I was getting to like this! I then added the beetroot pulp and 2oz of sugar gently boiled for 5mins and jarred it up into warm jars :happy7: it was tasting very nice yee! haa! Claybasket
