Title: Jam/Jelly problem

I hate seeds so I make the jelly preserve with the juice.  I have reasonable success as I find it is not an exact science. 
I have just made Apple and Blackcurrant which is a nice consistency except there seems to be a liquid between the jar and the jelly ie I can tip the jar and the jelly moves within this outer case of liquid.  Now this has happened before and it does not seem to impact on the preserve, taste etc. is fine but I would really like to know what caused it - can anyone help?

Add more lemon juice.  I use 2kg fruit, 1kg jam sugar and juice from 1 & 1/2 lemons.  Recipe says one but the bit extra works better to bond it together more.
