Title: Storing cooked beetroot.

Hello all.

I obviously didn't guess the right quantities of beetroot to sow and my plants are getting too the stage where they are likely to need to be stored after cooking for a several days before being totally consumed.

How do I get them to last? Can I just wrap it in cling film and slice it as required or do I slice and store in vinegar (which seems a lot of vinegar to be using)? What method do you suggest/use?

They will store in fridge for few days as they are..but any longer term you need help from vinegar. I don't know how cooked beetroot would freeze, but perharps it is worth of trying if you have lot to deal with.
If you use vinegar straight from the bottle, it doesn't make the beetroot last more than couple of weeks (in fridge)..to make it keep properly, the vinegar and beetroot needs to be boiling hot before sealing it into jars.
You could try all different ways of storing and eat in right order according the storage method.

Beetroot can store quite well uncooked.  Either in damp sand or left in the ground covered with straw, though the slugs can be a menace, as can deer.  They keep quite well raw in the bottom of the fridge.

Goodlife I am eating beetroot I pickled last year just by pouring vinegar from the bottle into a jar of cooked beetroot, this is the way I have always done it and never had a problem even with pickle more than a year old.

I have stored beetroot for months in damp sand or shop bought compost. I prefer to use sand it's less likely to develop mould. It's my preferred method because I don't like it pickled.
You could always freeze it.

In France, people don't eat beetroot in vinegar and now I wonder quite how I could have ever eaten it that way! Raw beetroot will easily store in the bottom of the fridge for 2 weeks.
What about relish that you can then store in sterilized jars?

Antipodes - will the beetroot still store if you use some of it? The relish sounds good - I'll definitely give that a go.
