What is the best way to cook curly kale. Mine is a sort of purply colour and was as tough as old boots and stringy. When is it best to pick it.
I've only ever grown curly kale with a view to harvesting over the winter. The frost tends to soften the leaves and sweeten them up a lot.
In that condition a quick boil in salted water is how I like it ... simply done. But I would think that leaves in the summer would be tough.
I pick the smaller younger leaves and leave the big ones to power the plant. I steam mine and then add butter and pepper.
