Title: Peas
Post by: elhuerto on June 08, 2013, 11:59:04
It's been an incredible Spring for peas - first time ever here. We've had loads of rain and warmish days. I've already picked a few peas enough for a couple of meals but today I've got a bucket load and there's alot more to come. Seems a shame to freeze them but I'm not sure we can get through them all this weekend so what's the best way of short term storing - with shells on in the fridge, shells off in the fridge? Is it ok to freeze a few without blanching?

By the way I have a good recipe for peas with serrano ham if anyone's interested - very typical here as a starter or supper and very simple to prepare.

It's never been a problem here as with 2 kids they rarely even get in the house! Nice problem for you to have :) . I'd keep them in their shells in the salad draw of the fridge as that keeps Broad Beans the best. Would love the recipe for combining with Serano Ham please - peas and ham go so well together.

Guisantes con jamón - Peas with ham

A starter dish or light supper. I have it as a supper with a crusty baguette. All measurements are extremely vague as it's really just a case of throwing some peas, ham, onion and garlic together

500g peas
75g serrano ham chopped up
couple of garlic cloves chopped up
small onion chopped up
olive oil, salt & pepper

Boil the peas til just tender. Fry the garlic and onion in the olive oil til soft and start to change colour. Add the peas, pinch of salt and pepper and fry for 2 or 3 minutes. Add the chopped up ham, fry all together for a couple of minutes and serve.

Nice simple tasty recipe elhuerto,cheers.

Every time I look at your avatar it reminds me of our 3 visits to Menorca in September for the Mahon festival and Spanish horses parading through the streets and going in the houses so the elderly folks can pat their heads, brilliant to see.
I'm afraid the 2 litre bottles of chilled lemon and gin ,darned if I can recall its name, got drunk way too easily in the heat and by god if I didn't dive in with the local lads to touch the horses under belly when the riders reared them up,I must of been mad.
Beautiful Black stallions,we must go and see them again one day.

Yes Duke that was the tipple but it was the mixing of it with lemonade then cooled in 2lte bottles that were lethal falling over water on very hot days.....

It was called Pomada locally and boy....did I get wet or what.....well annointed you might say.
