I do luv the odd Kebab,and this Chicken & Lamb Combo always
fits the bill..!!!!!!!!!!!
Ingredients
2 Chicken Breasts cut into 1 inch cubes
250g Minced Lamb
3 Tbsps Olive Oil
Juice of 1 Lemon
2 Cloves Garlic Minced
1 1/2 Tsps Ground Cumin
1 Tsp Ground Coriander
1 Tsp Sweet Paprika
1/4 Tsp Ground Cinnamon
1 Tsp Ras El Hanout
1/2 Tsp Ground Ginger
1 Red Chilli
Fresh Coriander
1/2 Tsp Dried Oregano
salt to taste
mixed salad of choice
Chilli Sauce
Sour Cream
Fresh Mushrooms
Naan Bread Dough

Ok,lets make the marinade for the Chicken.
Combine in a large bowl,Oil,Lemon juice,Crushed Garlic,Cumin,Ground Coriander,Paprika,Cinnamon,Oregano,Salt,
Ginger,Ras El Hanout,
Now blend together and add Chicken Breast cubes,

Make sure Chicken Breast pieces are well covered,cling film bowl and fridge over night.

Now Prep Minced Lamb Kebabs,add the same ingredients as above but add the chopped Chilli and 1 Tbsp of Chopped Fresh Coriander,form into sausage shape,now cover with cling film and fridge overnight.
Ok,lets get the Naan made................
Naan Ingredients

20g of Fresh Yeast
150ml warm milk
2 tsp sugar
450g Plain Flour
1/2 tsp salt
1 tsp baking powder
2 tbsp olive oil plus extra for brushing
150ml natural yogurt
1 large egg
Nigella seeds
Put the milk in a bowl. Add 1 tsp of the sugar, and the yeast. Stir to mix. Set aside for 15-20 minutes or until the yeast has dissolved and the mixture is frothy.
2. Sift the flour, salt and baking powder into a large bowl. Add the remaining 1 tsp sugar, the yeast mixture, 2 tbsp olive oil and the yogurt and egg. Mix and form a ball of dough.
3. Empty the ball of dough on to a clean surface and knead it for 10 minutes or more, until it is smooth and satiny. Form into a ball. Pour about 1/2 a tsp oil into a large bowl and roll the ball of dough in it. Cover the bowl with a piece of cling film and set aside in a warm room untill the dough has doubled in size.

For this recipe I weigh out 100g approx and roll it out extra thin about 2mm thickness.

im not too fussed as to shape as after all its just the bread sandwich to hold all the goodies.

Preheat grill.
Preheat oven to 250 degrees and place large tray in oven to heat for 5 mins,take out tray from oven.....MIND YOUR FINGERS AS ITS BLOOMIN HOT !!!!!!!!!!!!!!!!!!!!!!!
Place Naan dough onto hot tray and return it to oven for 2 mins,then remove and place tray under Grill for 1 minute.
Wrap in foil and set aside.

Sort all Marinaded Chicken pieces and Lamb Sausages onto skewers along with mushrooms or veggies of your choice.

Turn skewers under grill for abour 15 mins till everything is cooked through.

Reheat Naan Bread under Grill for 1 minute,then arrange salad,Chicken Pieces,Lamb Kebabs,and drizzle chilli sauce and sour cream over to taste.

Unhinge jaw and shove it in sideways for instant effect.
