Title: What can I make/do with my yakon

Wazs pleased with my yakon harvest but what can I do with them, any ideas you great cooks out there?  Not enough to make yakon syrup unfortunately.

Just eat it raw..sliced or grated to make salad...try in small portions in stir fry, but don't over cook it, just a quick toss to warm it up.

So far I have sliced/diced them and eaten them raw.

Thanks peeps, so far only eaten it raw like an apple.  No one else will try it.
