Grown oca for the first time this year boiled them, but the wife wasn't that impressed is there a better way to cook them ?
Steam them for about 5 mins.
I like steaming them..it keeps the most flavour 'in' or often I chuck some straight into food and cook/warm them 'in it'.
I like mine with still bit of bite..not totally soft.
Coat them raw in seasonned cornmeal or breadcrums and bake them in the oven for 10 mins. Wonderful :happy7:
My favourite is roasted with a little ginger and honey. Great that way alongside pork chops or similar. Nice counterbalance to steamed chard .
