Title: Carrots - still in the ground

Is it okay to leave carrots in the ground? Harvested some yesterday and they same to taste ok.

I've allways left all my root veg in the ground untill needed, with the exception of celleriac whuich suffers from frost damage, never had a problem!

I find that it becomes a problem digging up carrots when the ground is rock solid frosten.   Also if they stick out of the surface the deer nibble/rabbits them, so I try and earth them up.   So they become more difficult to find and dig up without damage.

Then there is a point when the weather warms and they become furry with little roots.  Still taste ok but start to go a bit rubbery, ok in soups and stews though.

If you can dig them out of the frozen ground then they'll proably need a shave.   :happy7:

I find mine get eaten by mice if I try to leave them in.  They start from the bottom and leave the skin, so when you harvest them it is just a couple of hollow skin left at the shoulders :BangHead:

Due to the slug population, ours are stored in damp sand in the garage :toothy10:

I still have loads in the ground - mostly Autumn King - and Ill leave them in till I want them.  AT some point though they do all have to come up.
