I saw this recipe on the 'Net and I fiddled around with it a bit. It makes a great veggie or non veggie dish, I would have liked leftovers but it all got scoffed!!! It was a really nice change to eat the chard like this, and I expect you could also make it with spinach or similar stuff.
Small bunch of swiss chard, slice stems and chop greens sepearately, wash thoroughly
1 large onion
100g chopped bacon (or leave out for veggie version)
Basil, and salt and pepper and a little rosemary
3 or 4 cloves of garlic
100g of gorgonzola, or soft goat's cheese (or another soft cheese according to taste)
4 tabs of sour cream, creme fraiche or single cream
(I also put in a handful of rocket that I had picked and there wasn't enough for salad).
100g dried pasta per person (I used Penne rigate, which went down quite well. )
In boiling salted water, cook the chard stems and greens until stems are tender: drain well.
In deep pan, fry onions in a little olive oil and when golden, add bacon if using and continue to brown a little.
Add the swiss chard to this and stir thoroughly. Season.
In the meantime cook and drain the pasta.
When the onion-chard-bacon is thoroughly cooked, add the garlic and cook for 1 min until the garlic softens. Add the cream and the cheese. Cook on a low heat stirring until cheese melts.
Mix this sauce with the pasta and serve with a salad, and some parmesan.
My kids wolfed it down.
