Title: pickled onions

 Gerry brought in about 3 pound shallots from the garden yesterday, all dry and rubbed,,nice but sooooo small. so we decided to pickle some, no matter what you want to do with them you have to peel them, yucky job.
anyway we did about a pound that I pickled as the Zuni red onion recipe, which we like.. they came out well. still have 1 1/2 pound to go, as I put about 1/2 pound round a pork loin roast I did in the clay baker...
I hope next year they come out bigger,,,,,,,,qahtan

Nice!!!! I hjaven't made pickled onions for ages, as it's really only me that likes them. Maybe I should do a couple of jears next year, treat myself.
My shallots did not work at all this year, I tried to cheat and plant some of my own saved ones. Next year I know to buy proper sets!  They are quite expensive (the sets)  but they are worth it as very dear to buy in the shops later on. Think I might even try some white onions next year, I usually do brown and red but fancy something else too  :toothy10:

I haven't grown shallots since my first lottie 30 years ago but I found them useful for sauces because they cooked down to nothing unlike onions which stay more solid.
I have been tempted by growing banana shallots but my available space is running out.

Qahtan I have a clay baker too. I think they are such a good cooking tool. Everything is so tender when cooked in them.

When I was in Harrods some years ago on one of our trips back to UK. I only go in Harrods Food Halls.. anyway in the produce department they had these long slim shallots, I suppose they could have been banana shallots. so I bought just 2.
bought them home, back to Ontario Canada, planted them the following spring. nothing, not a root sprout, nothing. so I presume they were a GM product. much to my disgust. I though Harrods was better than that.   qahtan

They tolerate being planted quite close together, I find. They are delicious in sauces and to perfume salad dressings.

I remember trying to grow from greengrocer bought ones a long time ago and they never set root. Maybe they are treated. I think buying from special suppliers is needed and is not cheap.
