Title: big bulb spring onions

I left a row of spring onions in too long and of course they have grown very fine clean bulbs.  They are a bit too big and strong for salads.  I would hate to compost them, I'm sure they will pickle, but what else would you suggest?

I did the same a few years ago... They are great in stews or any dish that requires onion.. freeze them whole and use as required.. Dont ever waste an onion by composting it!!!

Slice them and let them sit in fresh lemon juice for an hour. it mellows the flavour quite a bit and they can be used in salads.
