What do you think this edible is?  ;D (not the flower but some other part of the plant)

It looks like the flower of Yacon (Smallanthus Sonchifolius). I have three plants growing well on the allotment.

Really looking forward to trying the tubers later in the year and making yacon syrup as an almost zero calorie sweetener.

Are yours in flower, mine are still thinking about it?

Next year I hope to use the propagules to increase the stock dramatically.

They have been no trouble to grow and completely pest free. :)

Yes, yacon. My spell check just tried to change it to bacon!
Mine are also flowering, but are rather small this year. Flowers are a sign that tubers are forming.

I've never had Yacon flowering before, so I was surprised to see that bright little thing on the plant.

Mine is thinking about flowering - looking forward to this lovely sun-flower like bright yellow in the garden here too.  Thank you for showing us, goodlife.
