Title: Runner bean recipe

Have frozen some, given some away, but speaking to my Asian friend, he puts dessimated cocoanut with his, but didn't get the rest of the recipe.  Have looked up a bhajii and gujareti sem recipe, but with the rain today, probably be loads more tomorrow, so love curry so anyone got an very easy recipe or a tasty veg recipe.   Also have courgettes, no toms yet (still green) but have bought some.

There's lots of good Indian treatments for vegetables, most of them adaptable to runners. Today I did a stir fry based around them with some Chinese sauces (and peanut butter). They are also good with tomato and onion sauce. One favourite way in my household is to finish them with butter and lots of lightly toasted flaked almonds.

Many of our neighbours are of Gujarati extraction, and welcome almost all fruit and veg.  We're never at a loss as to what to do with a glut!

One of the few exceptions is runner beans.  No-one wants them.  We've tried them ourselves in a couple of Indian recipes for French beans, but to us they taste a bit odd.  And in anything involving tamarind, they're postively unpleasant.

It's all a matter of personal taste, of course.

Try this one - it makes a great rellish or side additive...


Curried Beans... by GJC

4 lbs fresh green beans
2 lbs onions
3 cups sugar
3 tablespoons flour
3 cups vinegar
2 tablespoons curry
1 tablespoons mustard powder
4 cloves chopped garlic
1 tablespoon salt

Cut up beans and onions. Boil till softish. – drain well.

Boil vinegar, salt, sugar and garlic together.

Mix flour, curry and mustard and a little vinegar mixture to make a paste then add the of the vinegar. Add this mixture to beans and boil for a few minutes.

Bottle while hot and close well.

Or cool and fill packets for the deep freeze.
