Title: Freezing Beetroot

Has anyone frozen beet?   I 'googled' to see if you could and you can.  I hoping to do this with some aswell as trying to store some aswell.

Cook, it, slice it and freeze it. Not as good as the freshly cooked. It goes 'wetter' and only really much use as a hot vegetable.

I have pureed beetroot and frozen it in portions ready for beetroot cake. Works very well. I also froze beetroot juice

If your beetroot is ready for cropping you know you can just store it until needed.  Mine goes unwashed in a box, covered with newspaper in the garage and will easily keep until the winter.

I use Madhur Jaffrey's recipe and freeze blocks of it in opaque plastic 'takeaway' containers.
I think it tastes better after freezing!   Cheers,    Tony.
