I have a sudden glut of beetroot and they wont all last (slugs!) in the ground.
I want to preserve them but I am not a fan of the usual vinegary pickeled beets.
Are there alternative pickling techniques that temper the vinegar - maybe like a Gerkin reciepe??

Madhur Jaffrey has an excellent recipe for beetroot and onion. It is freezable and goes very well with a curry.

I add 6oz demerara sugar to the vinegar along with spices, it makes it so much more sweet, no got that vinegary taste, lovely.
Beetroot cake is good too! let me know if want a recipe.

Are there any recipes with no vinegar at all, and preferably no sugar either. Enough calories in the beetroot.

I do not think that it would dissolve so well Shirl, plus we boil up the spices so the vinegar is warm jfrom that!
