One O my Favs is the Skate and this simple Roasted Recipe with a Hot Citrous sauce gives the flesh a bitter sweet flavour.
1 Skate wing
Hot Dressing
1 Tomato Chopped
1 Red Onion Minced
2 Tbsp Balsamic Vinegar
1 Tbsp Fresh Lemon Juice
1 Tbsp Capers
1/2 Tsp Dried Oregano
2 Tbsp Olive Oil
Roast the Skate Wing according to its weight and thickness in a Hot oven
coated in a thin layer of oil and seasoned well then wrapped in Foil.
(This large Wing was 30 mins @ 180 degrees)
Once cooked through set aside.
Prep Hot Dressing Ingredients

Heat frying pan and flash fry Hot Dressing for 5 mins.

Serve Fish and smother with Hot Dressing along with fries of your choice.

I always save a section of fish for Cold eating,believe me its really tasty in a buttered roll with Tarter Sauce and Sliced Tomato the following day after fridging overnight.

i love skate but usually just pop it between 2 plates with a tablespoon of milk a thingy of butter and steam it OMG it never makes it to the plate :)
