Went Gooseberry picking yesterday to pick the last of the season and ended up with more then a pies worth. So I decided to use the ones which were the least ripe for jam making.
I have a digital scale and weighed the fruit in lbs & ozs ,added them to pan with water and then weighed the sugar. You guessed it, somehow I managed to touch the button that changed it to grams. I didn't realise until the sugar had been poured into the pan. In my mind I thought it was a lot of sugar and today I can't even think what numbers I was exactly looking at !!!! Needless to say I think a new pair of specs is called for.
After 5 mins of panic I then did the following. I had a small amount of fruit left over for a second pie so they went in the pan as well, when all dissolved I used a jug to remove a lot of the water in the pan. After boiling I did finally end up with jam albeit a rather sweet one. Lesson learnt. ;D
Not exactly the same - but my kitchen scales have a tendency to go a bit haywire when the battery inside needs replacing.
Sometimes they switch off halfway through putting in an ingredient and when I am adding say flour to other ingredients, it is a pain having to guess how much went in before they switched off.
I now closely watch the numbers as I pour.
Still easier - much easier - than my mothers scales with the weights - even though those were very accurate and can cope with the weight of an airmail letter as well as the weight of a baby!
Pity you didn't have other fruit in the freezer to supplement the goosegogs - goosegogs and loganberries or raspberries would have been my attempt to resolve the situation.
Would goosegogs and chopped apple work? What are the classic combination recipes for gooseberries. I wonder?
Hope the jam is nice despite the initial hickup. Maybe in a victoria sandwich cake, where you can use less sugar for the cake? Or as a filling in pancakes - no sugar on top?

I like your suggestions...... It is very sweet jam so I'll think they will work well
I'm no techno geek so I have the old fashioned scale with a dial - Just like Grandma used ;D So no possibility of a mistake..
You could reboil it and add some other fruit, if it is still thin use it asd pancake syrup, it will be less sweet. Depending on the fruit you add you could use it is sweet and sour sauce or as a dipping sauce. I do this all the time and make lots of sauces for using with meat.

MOH and I love duck so I think the goosberries will make a lovely sauce as well as the pancake etc ideas.
