Title: saving seed onions in trays as onion sets?

I sowed some onion seeds (giant kelsae onions) in march and was unable to plant out and they are still in the cell trays  :-X :'( ::) They have formed largish like sets and I was thinking if I let them dry off and stored them over winter could I plant them in the plot as sets or would they just grow and bolt/go to seed?

Without proper heat treatment they'll bolt, though they will form a large bulb as well, but it will have a flower spike through it and it won't store....
