Title: Elderflowers, cordial and freezing

I found out by accident/experiment that it is quite possible to freeze elderflowers and then to make lovely cordial out of them. I hadn't got all the ingredients that I thought I had when I came home with a load of elderflowers so thought I would try putting them in the freezer till I had.

It worked fine although the flowers went brown when they started defrosting. Doesn't seem to have affected the flavour any.

Just thought it might be of use...

That's useful to know. For the first time this year, I have got all the ingredients together before the elderflowers are ready!

Great tip particularly as they seem to be variable ripening among the bushes.

Could you share you elderflower cordial recipe?

The cordial recipe that i use is:
30 heads elderflower
4 pts boiling water
1kg sugar
1pkt citric acid (50g)
3 lemons grated rind and roughly chopped

Dissolve the sugar and citric acid in the water. Add the lemons.
When tepid, add the elderflowers and steep for 2 days
Strain and bottle
Can be frozen

I also freeze elderflowers, but I vacuum pack them first, and the results are excellent!!

I've not had a chance to pick any elderflowers yet, they seem late this year and now they have started the weather is just foul. I'm hoping to make some wine and lots of cordial, both recipes sound great, thanks.
