Title: Sun Dried Tomato Ciabatta Bread

Top Bread for munching with soups and stews as it slices fairly small or great sandwich nibble with salamis.

Starter.

7g fresh yeast
200ml warm water
350g plain flour

For the Dough mix
15g Fresh yeast
400ml warm water
60ml warm milk
500g white bread flour
1tsp salt
3 tbsp of Extra virgin olive oil
4oz chopped sun dried tomatoes.
(makes 3 loaves)

Cream yeast mix and add starter water and flour,and form a firm dough
place in a bowl and cling film cover it for 12 hours/overnight

Cream dough yeast to water then add milk and flour to dough starter mixture gradually(it will be a very wet mix so do this slowly)continue to knead the mixture in the bowl......this is far to soft to work on a floured board so leave it in the bowl .

Now beat in the salt and olive oil and mix together,cover bowl for a further 2 hours then divide onto 3 floured baking sheets and using floured hands shape it into an oblong loaf about 1 1/2 ins think.

cook in pre heated oven (20 mins @ 200 degrees fan oven)

20 mins later ready for munching.

leave to cool then slice and enjoy..!!!!!!!!!!!!!

A great way to make sun dried tomato bread in general is to get your freshly mixed dough and chop it into about 1" sized pieces. Chuck it in a bowl and mix the oil and chopped tomatoes through it, whithout mixing it in. Just coating the dough pieces. Literally stuff it into tins and you end up with a marvelous "tearing" bread that, when sliced, also has a lovely red marbelled look.

Might not work with ciabatta though... ;)

Great idea, Gordonmull!  Just tried it with my ordinary whole-wheat bread recipe. Pronounced a success by all, for lunch today!  I probably put in a few too many pieces of sun-dried tomatoes though!

You can never have enough sun dried toms! Loving the seeds in there. Might have to nick that idea!
