This recipe was given to my by my best friend at work, she got it from a mag, tried it, told me how good it was. Now I have made it twice and it is FAB!
225g Self Raising flour
1 level tspn baking powder
225g caster sugar
2 large eggs
1/2 tspn almond essence
150g melted butter
250g cooking apples (peeled and cored)
25g flaked almonds
Lightly grease a 20cm tin, preheat oven to 160 fan, 140 or gas 3
1.. measure flour, baking powder, sugar, eggs, almond essence and melted butter in a bowl. Mix well til blended and beat for a minute.
2..spread half of this in the prepared tin. Thickly slice apples and lay on top of the mixture in the tin, Piling mostly towards the centre. Using two dessert spoons roughly spoon the remaining mix on top of the apples. Its a bit fiddly, just make sure that the mixture is covering the apples and covers the centre well as it spreads out in the oven. Sprinkle with flaked almonds.
3.. bake in the oven for 1.25-1.50 hours until golden brown and the edges are coming away from the sides of the tin.
She says " best eaten when warm with some whipped cream"
but we just eat it like cake and it don't last long!!
Oh, what memories! 8) Glad I looked in here on this rainy afternoon when otherwise I'd be out doin Other Stuff..........please can I endorse this exact recipe (including the hint to cover the apple mix well). I'm not suggesting even the hint of a tweak to it - it's the one I used and it's really really lovely - warm or cold.
